Zucchini Bread

INGREDIENTS:

• 4 c. Shirley J Universal Muffin & Cake Mix
• 1/2 c. Water
• 2 c. Zucchini (shredded)
• 3 Eggs
• 1 1/2 tsp Vanilla
• 1 1/2 tsp Ground Cinnamon

DIRECTIONS:

Grease and flour two 8X4 inch pans. Preheat oven to 350 degrees. Beat eggs in mixing bowl for 30 seconds and then add remaining ingredients to mixing bowl. Mix on low speed for 30 seconds. Scrape sides of bowl and mix on medium speed for 90 seconds. Bake for 30 to 35 minutes, or until tester comes out clean. Cool for 10 minutes and then remove bread from pan, and completely cool.
